Chocolate! Who doesn't love chocolate!?! Well, besides my husband (he's an oddity). I crave it, but I rarely make anything chocolate because I'll be the only one eating it. I have a solution! Because my team at the gallery is so fabulous I'm making chocolate overload cupcakes to share (and spare myself lol). Topping off the moist and delicious chocolately cupcake goodness will be ganache. If you've never had it ganache is incredible and versatile, I now use it whenever and wherever I can! I had some trouble in the past getting the perfect consistency then I discovered this post from Natasha's Kitchen and now it's perfect every time!
For me, there's nothing more disappointing than lackluster chocolate cake when you're having a serious craving! I prefer dark chocolate and after searching and searching and searching and searching ☹️ for a replacement for my favorite chocolate cake, the Chocolate Chocolate Tower that Outback Steakhouse has now deleted from the menu, I resorted to making my own. I still need to find a recipe for the raspberry sauce. Anyway, I discovered the Cisse' Cocoa Co. Dark Chocolate Cake mix at my local grocery store and decided to give it a try. It's moist, has a fantastic texture, and is packed with deep rich luscious flavor. It's totally worth the price IMHO! I've made a layer cake and now cupcakes both with great success. We'll see how my coworkers feel about it, but I honestly don't know how they could possibly complain 😉

Why I've been so absent...
SORRY, NOT SORRY!!!
Trigger warning! - This is an emotional post/update about where I am emotionally and where my current future plans are taking me/us (this post is more of a journal entry and it's kind of heavy).
I don't know who this will reach and I'm not sure where to start so here goes...
If you are unsure of your ring size I offer inexpensive reusable sizing bands. You can also visit a reputable local jewelry store and ask to be sized.
